Bex Beef Bourguinon Crockpot Recipe

After having a delicious Beef Bourguinon in Louisville, I wanted to try adapting this savory beef stew and use my crockpot to make it. I set up all the ingredients within 20 minutes and left it to cook for over 8 hours on low.

I used the formal recipe for Beef Bourginion, but made some adjustments and omitted the bacon to be a little leaner, add celery  and I made my own vegetable stock to use instead of beef broth.

  • 2 pounds of steak meat (such as round, chuck or cubed stew cut)
  • Steak dry rub or salt/pepper/italian herbs
  • 2 tablespoons of flour
  • 1 tsp olive oil (if you don’t use bacon)
  • 4-6 pieces of bacon, diced and cooked
  • 1 medium yellow onion – large diced chunks
  • 2 cups of cut carrots (or baby carrots)
  • 3 large potatoes, skinned and cut into smaller pieces
  • 2 cups of diced celery
  • 2 cups of mushrooms, sliced in half
  • 2 cups of Pinot Noir or Burgundy Wine
  • 2 cups of beef broth (or vegetable stock)
  • 1 small can of tomato puree -10 oz. (or tomato sauce)
  • 2 tbsp of cornstarch or flour (if desired to thicken up the sauce)
  • 2 tsp of butter (if desired to add creaminess to broth)
  1. If you are using bacon, fry diced bacon in a frying pan until done. Remove from pan and drain.
  2. Wash and pat dry beef cubes, add dry rub and toss in a bowl until coated. Add to pan with the olive oil (unless you use bacon grease) on medium heat, cook on  all sides until browned. Remove from pan and set aside.
  3. Sprinkle seared beef cubes with flour on all sides and prepare for crockpot.
  4. Turn on your crockpot to low and add the cut potatoes, onions, celery, carrots, potatoes, wine, beef broth or vegetable stock and can of tomato puree. Mix all ingredients with a large spoon and add beef and bacon to the crockpot
  5. Cook for approximately 8-9 hours on Low Heat.
  6. If you desire a thicker broth, you can add cornstarch or flour and raise the cook heat towards the end to High heat.

Crockpot Corned Beef

20120518-145645.jpgI love Corned Beef and Cabbage. I made some for St. Patrick’s Day this year and decided to take the easy route and let the slow cooker cook my meat, while I cooked everything else seperately on the stove top.  I bought a monster of a corned beef brisket and opted for the faster cook method.

  • Add Corn Beef to the Crockpot
  • Cover with water completely
  • Add spice packet
  • Add peppercorns

Set Crockpot to High for 4 hours. About 3 hours into the cook, add sliced apples. These are absolutely amazing when they are done20120518-145712.jpg20120518-145730.jpg

Crockpot Recipe: Ham and Multi Bean Soup with Spinach

After Christmas, I had the ham bone with meat on it and wanted to use it to make a Crock Pot from scratch recipe. Something good and hearty, so I made the Ham and Multi Bean Soup with Spinach.Multi Bean since I purchased the bag of 15 different variety beans from Safeway. Large and small, this bag has lots of hearty beans. I do not use the packet of “ham flavor”, it has MSG and my ham has “ham flavor”.

Note: I bought the bag and didn’t notice the 24 hour soak, so I soaked them for 4 hours and slow cooked for 12. They absorbed the water quickly, so They came out perfect, so I can’t imagine that they really needed 24 hours.

1 bag of Multi Bean Soup
3 bulbs of garlic diced
1/2 Medium Yellow Onion
3 carrots, diced
3 celery stalks, diced
1 bell pepper, diced
1 ham bone with meat
2 quarts of water or more to cover
3 cups spinach, diced
italian seasoning, cayenne
Salt pepper

Put everything into the crockpot, making sure that you cover everything with a least an inch of water. Then cover and set low for at least 10 hours. I did this overnight.

In the morning, the soup broke down and boiled slowly. About 30 minutes before I was ready to turn it off, I put in the spinach and submersed them in the soup. Once it was done I added salt and pepper, it was so simple that it absorbed the flavors of the meat, veggies and beans.

Now that’s a soup!

Crockpot Recipe: Beef and Vegetable Stew

Really easy beef stew, just add all ingredients and let the crock pot do all the work! Makes a huge crock pot of stew, so adjust as necessary.

  • 2 lbs beef stew meat, cut into 1 inch pieces
  • 1/4 cup flour
  • 1/2 teaspoon pepper
  • 1-2 bay leaves
  • 4 potatoes, diced
  • 1 stalk celery, sliced
  • 3 large carrots, diced
  • 1 1/2 teaspoons salt
  • 2 1/2 cups vegetable or beef broth
  • 1 garlic clove, diced
  • 1 teaspoon cayenne
  • 1 teaspoon Italian seasonings
  • 1 large onions, chopped
  1. Place veggies in crock pot, cover with broth. In a bowl, mix flour, salt, pepper, cayenne and Italian and pour over meat.
  2. Stir to coat meat with flour, add meat to crock pot and fold into mix of veggies.
  3. Add remaining ingredients and stir to mix well.
  4. Cover and cook on low for 10-12 hours or high for 4-6 hours. Stir stew thoroughly before serving.
