Mahi Mahi Fish Tacos (3 part recipe)

IMG_8469 Step by step, these tacos were worth it. I bought some frozen mahi mahi and wanted to try out my new Chipotle sauce that I made. Rice

  • 3/4 cup white rice
  • 1 3/4 cup chicken broth
  • 3 tbsp of chopped green onion
  1. Heat the broth in a 2-quart saucepan over medium-high heat to a boil.
  2. Stir the rice in the saucepan. Reduce the heat to low. Cover and cook for 20 minutes or until the rice is tender.

  • 2-3 pieces of Mahi Mahi Fish
  • 1 tsp olive oil
  • 3 tbsp of Chipotle Sauce or your favorite mild smokey salsa
  1. Clean and wash the Mahi Mahi filets and pat dry.
  2. Add Chiptole Sauce, let marinade for a couple minutes while you prep your fish.
  3. After 10-12 minutes after the rice has started, start grilling the fish, cooking the skin side down for 3-4 minutes before flipping. Cooking time should be 7-9 minutes or done to your preference.

IMG_8464Cherry Tomato Fresh Salsa

  • 10-12 Cherry Tomatoes, diced small
  • 4 tbsp of diced onion
  • 2 tbsp of chopped cilantro
  • 1/2 lemon squeezed
  • 1 tbsp of white vinegar
  • Cracked salt and pepper
  1. Combine all ingredients in the bowl and try not to eat it all before serving.

IMG_8467Just add tortillas, chopped cabbage, cheese and hot sauce and there you go.


Beer Baked Mussels

20130115-102343.jpgIn my local market, I found these New Zeland Green Mussels, already precooked and frozen. I defrosted the box and found that there more than we could eat and did them two ways. Beer Baked and Cooked in Coconut Curry

Beer Baked Mussels

  • 20-24 Defrosted Precooked New Zeland Green Mussels
  • 1 beer, IPA, Stout, Ale or other flavorful beer
  • 1/3 onion, finely diced
  • 2-3 pats of butter or 2 tbsp of olive oil
  • Bread Crumbs
  • Parmesan Cheese (optional)
  • Cracked Salt and Pepper
  1. Pre Heat Oven to 350 degrees.
  2. Heat butter in small pan and add onions, sauté for a few minutes until golden
  3. Place mussels in the baking pan and pour the bottle of beer over the mussels
  4. Spoon the sautéed onion onto each mussel and add a little breadcrumbs and Parmesan Cheese to each mussel. Crack Salt and Pepper over them.
  5. Bake in the oven for about 30 minutes, checking often and basting the mussels with the beer broth.


Hefeweizen jalapeño bacon cheese muffins


I came up with this recipe one day, by trying to one up my own recipe. I made these Hefeweizen muffins and even jalapeño muffins, but I decided to take a little risk and combine all these great ingredients together. The result was amazing

  • 1 box of Jiff Cornbread Muffin Mix
  • 1 egg
  • 1 cup of hefeweizen beer of your choice
  • pre-cooked bacon, diced small
  • 1 finely diced jalapeño
  • 3 tablespoons of grated cheese

Combine all ingredients in a bowl. Make sure the consistency is not too watery – you may have overdone the beer. If so add a little flour. If it’s perfect, spoon it into greased muffin pans and bake for 10-12 minutes or whatever it says on the box20120620-082352.jpg
