I love grilled herb chicken. It’s easy and can be used in several different dishes. I tend to keep a stock of different herbs, so use what you have.
- juice of 1/2 lemon
- 2 tablespoons of olive oil
- salt and pepper to taste
- 1/4 teaspoon dried rosemary
- 1/2 teaspoon dried leaf thyme
- 4 tablespoons melted butter
In a bowl, add 1 tablespoon of olive oil to chicken pieces, then add salt, pepper, rosemary and thyme. Mix around and place aside.
Meanwhile heat up a pan on medium heat with a tablespoon of olive oil or spray oil. Add chicken to pan and cook for 10-12 minutes on each side. When the chicken breasts are done, remove from heat and let cook slightly before serving.
