Chicken Pasta with Spinich

Simple meals with simple ingredients. I find that the best way to lose weight and feel better is to make your own food using healthy ingredients. I’ve been making this dish for years, adapting it to the fresh vegetables I have on hand, so make it your own!

  • 2 tbsp of Olive oil or 2 pats of butter
  • 2 tbsp of diced garlic
  • 1/4 – 1/2 Sweet Yellow Onion
  • 1-2 cups of diced tomatoes (I used Roma)
  • Italian Spices, Rosemary, Salt and Pepper
  • 3-4 cups spinach, diced into smaller pieces
  • 1 can of vegetable broth mixed with 1 can water or approximately 3-4 cups of water with a veg-bullion cube.

In one large sauce pan add the garlic and onion with a couple pats of butter or olive oil. Add tomatoes and let saute in butter with onions and garlic. Add Italian Spices, Rosemary, Salt and Pepper. Let cook a minute or two and add vegetable broth. Let boil and cook while you prepare the other items.

For the Chicken:

  • 4 Chicken Breasts
  • Ground Cumin, Italian Spices and Cayenne

Grill or pan fry chicken separately until golden and cooked til tender. This will be added to the sauce, but wants to be cooked and diced beforehand.

Pasta:

1 box or bag of pasta (I used rotini, anything works)
Boiling Water

Boil pasta, I use rotini since it’s simple to eat with the sauce. Any pasta works though. Follow directions per individual pasta type.

Okay… now we are almost ready. Add Spinach to sauce and it will quickly cook up. This is why we add it last. Once that’s in and covered, add chicken and let simmer for a couple minutes. Once your sauce looks good, toss in the pasta and remove from heat.

Add Parmesan and Pepper Flakes if you like. 🙂

Creamy Mashed Potatoes

Lots of people know how to make mashed potatoes. I know it’s not very original, but I cook mine in a different way.

  • 5-6 potatoes, diced
  • Enough Water to cover them
  • Italian Seasons, Salt for the boil
  • 1/8 cup butter (1/2 a stick)
  • 1/8 cup of milk
  • Spices of your choice, Garlic Salt, Pepper, Cayenne, Rosemary, etc.

Dice potatoes and cover with water. I leave the skins on. I like to spice up my water for the boil with Italian seasoning and salt. Let boil until done, stick a fork in them. I like them really cooked.

Remove water and put the potatoes back on the flame. Add butter and milk and whip them until light. Leaving a little water on the potatoes will thin them out a little more and make them creamy. Then add your spices, I like Garlic Salt, pepper, cayenne, maybe ground cumin. Whatever you like 🙂

Green Beans

I like my green beans simple for the Holidays with my favorite dishes. I purchase fresh green beans from a Farmer’s Market or Local Grocery Store. Make sure they look crisp and green.

  • A pat of butter
  • 1/4 Onion, diced
  • 4 cups of water
  • 4 cups of chopped green beans, like 1″
  • Salt, Pepper, Herbs

Add butter to a Medium pot or cover-able pan, add onions and saute. Add in herbs and then the water. Add the green beans, cover and let boil until they are done. The herbs steam the flavor into the veggies.

Drain everything, keeping a little water. Put back into the hot pot and add a little butter, salt and pepper to taste. Remove from pot and place in a bowl or small casserole dish.

Grilled Fried Chicken Tenders

I suppose you can say these are healthier than fried chicken and I absolutely love making them.

  • 3-4 Chicken Breasts cut up into small pieces
  • 2-3 cups of breadcrumbs (Progresso Italian Bread Crumbs work well)
  • 2 Eggs
  • 1/8 cup of milk
  • Italian Seasonings, Cayenne Pepper, Garlic Powder, Salt and Pepper

Directions:

  1. Cut chicken up into pieces that make it easy to cook thoroughly (not too thick)
  2. Prepare Egg and Milk dip by mixing them together in a small bowl
  3. Mix all herbs with the breadcrumbs in a dish
  4. Dip the chicken in the milk and egg and then the breadcrumbs, covering the whole piece.
  5. Place Chicken on a greased pan or non-stick grill. Cook on one side until golden and cooked 1/2 way before turning over. That ensures that each side gets cooked without flipping and flipping away.

Roasted Crab

Oh Guess what?! It’s Crab Season. I’ve posted these before, but here’s the newest crab dinner I made! Hurray for Crab Season!

  • 2 Crabs, Quartered
  • 1/2 bottle of white wine
  • 1/4 Chopped Yellow Onion
  • 3 Cloves of Garlic, diced
  • 3 Cloves of Shallots, diced
  • 4 Lemons, squeezed and thrown into the pan
  • Italian Seasonings
  • Cayenne

Directions:

  1. Put everything into a baking dish and mix up
  2. Heat oven to 350 degrees and cook until juices are bubbling, like 30 minutes or so.
  3. Crack and Enjoy.
  4. For Additional tastiness, take some of the broth with sauteed garlic and onions and such and mix with Parmesan Cheese and little pepper for a really tasty dip.
